CIA research to help food service industry communicate nutrition information

California may become the first state in the country to have a mandatory menu labeling law that requires restaurant chains of 15 units or more, to provide nutritional information on the menu -but not yet, says Governor Schwarzenegger.
CIA is looking ahead:
Researchers at CIA's Department for Menu R&D will be testing out healthy menu item descriptors and icons for conveying nutritional messages at the Greystone Campus restaurant. Department Chair, Chris Loss, and veteran consumer behavior expert, Howard Schutz (UC Davis) are collaborating on research that will help multi-unit food service operators and fine dining restaurateurs effectively adapt to this legislation.
"Traditionally, the food service industry has taken a 'cook and look' approach to these sorts issues" notes Dr. Chris Loss, in referring to the incorporation of new menu descriptors. "This proposed legislation may impact consumer behavior as well as the menu mix, in profound ways. By taking a science based approach, the CIA will help the industry effectively communicate health and wellness messages to the consumer, without compromising profits", says Dr. Loss.
